Broccoli Casserole


What you will need:

  • 32oz package of frozen chopped broccoli (Be sure it’s chopped!)
  • 10oz can cream of mushroom condensed soup
  • 8oz mayo
  • 8oz sharp cheddar cheese
  • 1/4 cup chopped onion
  • 1 large egg
  • salt & pepper to taste
  • 2 sleeves of Ritz crackers
  • 2-3 tablespoons melted butter plus more for greasing your baking dish
  1. Pre-heat oven to 350 degrees F and butter a 13×9 glass baking dish.
  2. Defrost your broccoli in the microwave (if needed) until it easily separates and transfer it into a large mixing bowl, set aside.
  3. In a medium mixing bowl combine condensed soup, mayo, egg and onions, and pour over chopped broccoli, mix well.
  4. Add cheese and combine well.
  5. Spread mixture evenly into your buttered baking dish. Season with salt and pepper to taste.
  6. In a small mixing bowl, crumble your Ritz crackers and add melted butter and stir well. Top casserole with Ritz and cover with aluminum foil. Bake 45 minutes and remove foil. Bake an additional 15 minutes until crackers are golden brown.20180927_1130431087613771.jpg
