Vegetarian “sausage-less” gravy biscuit casserole

What you will need:

  • 1lb Spicy vegetarian sausage (My store only sells the Morning Star patties. I completely thawed theses, broke these up into small pieces, and microwaved them 30 seconds so I could use my hands to crumbles and mush into a ground beef like texture.)
  • 1 jalapeno, chopped
  • 3 cups whole milk
  • 3 tablespoons flour
  • 2 tablespoons vegetable oil
  • Salt and pepper, to taste

If using refrigerated canned biscuits

Note: You can use any size dish (square, deep dish, rectangle) but I would not recommend a dish any bigger than 7×11. They gravy would be spread out way too thin. I used an old square casserole dish and it works fine.

  1. Pre heat oven to 400 degrees farenheit
  2. Grease a 7×11 baking dish. Cut biscuit dough into fourths and place half into baking dish, and bake 10 minutes, or until golden brown.
  3. Add vegetable oil to a medium frying pan, add vegetarian “sausage” and jalapeno, and cook over medium heat 6-8 minutes, or until jalapeno has had enough time to soften. Mix in flour, one tablespoon at a time, while stirring. Add milk, salt, and pepper and simmer on low heat until slightly thickened.
  4. Pour gravy mixture on top of baked biscuit pieces and place remaining biscuits on top, slightly push down, and bake an additional 10 minutes or until golden brown.
  5. Serve hot.

If using already baked biscuits:

  2. Add vegetable oil to a medium frying pan, add vegetarian “sausage” and jalapeno, and cook over medium heat 6-8 minutes, or until jalapeno has had enough time to soften. Mix in flour, one tablespoon at a time, while stirring. Add milk, salt, and pepper and simmer on low heat until slightly thickened.
  3. Pour gravy on top of baked biscuit pieces and place remaining biscuits on top, slighty push down,  and bake 10 minutes, or until heated through.
